Tuesday? But I wasn’t even finished with Saturday yet…

After a CRAZYYYYYY September this weekend was meant to be a bit more low key.  After Forsker Grand Prix, the first half of a course, and having my mom in Oslo for 2 weeks, what better way to spend the weekend relaxing and not doing much! Did that happen!? HAHA HECK NO, but am I mad!? NOT REALLY! I don’t know about many of you, but I am a people pleaser.  I have sort of fallen off this people pleasing train since I’ve gotten older. I have gotten better at saying NO to others and saying YES to myself.  It is OK to be selfish and focus on yourself.  You know yourself best, so listen!

But this weekend was a perfect combination.

1.Make some healthy and colorful treats!

Try this recipe!

You will need:

  • coconut milk
  • chia seeds
  • vanilla extract
  • bananas
  • blueberries
  • kiwis
  • coconut shreds

We first mixed 1 can of coconut milk, a few drops of vanilla extract, and chia seeds together for the bottom layer. You are supposed to let this mixture sit for a couple hours to thicken! Then we mixed frozen bananas, frozen blueberries, and coconut milk together for the top layer. Once you mix the bottom layer and pour into the glass then you can slide the slices of kiwi to the bottom of the glass. Top off with some shreds of coconut, serve, and enjoy!

 

2. Take a Hike!

So I have had my Canon for a couple years now, but I still don’t know how to properly use it.  Luckily, I have a friend who loves being out in nature taking photos, so off to Sognsvann we went to get my photography lesson on! What better way to spend a few hours on a sunny Sunday than walking in the forest and taking pictures!

3.  Start a New Book!

Anyone read Girl on the Train!? I know I breezed through it in about 2 days. I absolutely loved it, and Into the Water is just as thrilling.  Although I am only about 100 pages in, it is difficult to put down!

 

4.  Make a New PUMPKIN Recipe!

Because fall is in the air, so it is time for anything and everything PUMPKIN!

Try this slow cooker black bean pumpkin chili recipe!

You will need:

  • 3 15-ounce cans of black beans, drained
  • 2 15-ounce cans of plain diced tomatoes
  • 1 cup pureed pumpkin
  • 2 cups of diced yellow onion
  • 1 medium yellow bell pepper (I had a red one already, so I just used that!)
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon ground cloves
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon coarse ground black pepper
  • Toppings can include: avocado, tomatoes, scallions, onions, sour cream, etc.
    • I used shredded cheese of course!

 

I added all ingredients into my slow cooker and I cooked on high for 5 hours!
