That Summer Feeling

Bring on the hotdogs, beer, and ice cream because it is SUMMER IN OSLO!!!

 

Summer time in Oslo means long days and short nights. It is such a relief to have some warmer weather now until August, especially after the cold and dark winters we experience.  Once summer hits, many Norwegians are out of work at earlier hours, soaking up the sunshine, and grilling and drinking in the parks.  Even if you are a snow bunny the summer is always the best time to be in Oslo.

 

Norwegians also take their vacation time VERY seriously.  It was a very different experience coming from the U.S. to Norway.  Most People in the states don’t get as much vacation time, and if they do, they are usually seen still working here and there.  I was here last June/July before my summer holiday in August.  Oslo was a GHOST TOWN for about 3-5 weeks! A very different work culture than I am used to!

 

With more sunshine and vacation time, comes more picnics! As always, I turn to Pinterest for my summer recipes. I made this Tomato, Cucumber, and Feta Salad that I found on Pinterest. Check out Lemon Tree Dwelling’s page for more of her delicious recipes! She has a pineapple sangria recipe and curry roasted cauliflower recipe that I need to try out! JULY GOALS!

 

Again, I made this for a going away/summer picnic a few weeks ago.  With all the other picnic food, it is never a bad idea to mix in something fresh and healthy! Plus it included feta and who doesn’t love cheese!?

The recipe contains:

  • 3 large cucumbers
  • 5-6 Roma tomatos
  • 1 red onion
  • Feta cheese
  • Olive oil (1/2 cup)
  • Red wine vinegar (1/4 cup)
  • Dried Oregano (1/2 tbsp)
  • Minced Garlic (3 cloves)
  • Dijon Mustard (1/2 tsp)
  • Salt (1/4 tsp)
  • Pepper (1/4 tsp)
